In the U.S., celiac disease is diagnosed in only one in about 4,000 people. But a recent study by the University Of Maryland School Of Medicine's Center for Celiac Research suggests the disease actually affects one in 133 Americans. That would mean that it goes undetected 97 percent of the time.
