Apple Raisin Soufflé
Serves 10-12
5 large eggs, separated
2 cups finely grated apples, approximately 3 apples
½ cup raisins
1 cup sugar / or replacement
¾ cup crushed Chocolate Chip – La Vita All Natural Crunchy Cookies
½ cup canola or vegetable oil
1 teaspoon lemon juice
2 tablespoons orange juice
1 can crushed pineapple with syrup
Preheat oven to 350°. Spray a 9 x 9 inch square pan with non-stick cooking spray. Set aside.
In a large bowl, beat the egg whites until stiff. Using a spatula, fold in the apples, raisins, sugar and crushed Chocolate Chip – La Vita All Natural Crunchy Cookies. Fold in the egg yolks, oil, lemon juice, orange juice, and pineapple with the syrup.
Pour into the prepared baking dish. Bake 40-45 minutes or until top is golden. Scoop or spoon out (goes great with a Rum Raisin Ice Cream).
